This recipe began with my mom’s yummy cookies. She used to take the graham crackers and put them between wax paper and use a rolling pin to turn smash them! Ah the convenience of a food processor! My additions are the egg (which is probably totally unnecessary and entirely unhealthy!) and the butterscotch and white chocolate chips. I actually omitted one of mom’s ingredients; she always put in walnuts. But I think I react to walnuts so I’ve left them out for years.
1 package of graham crackers (usually 11 crackers I think) NOT the whole box, but inside the box you’ll see the wrapped packages … know what I mean?)
1 can sweetened condensed milk
1/2 package butterscotch chips
1/2 package white chocolate chips
1 package chocolate chips
(I usually double this recipe)
Put the graham crackers in a food processor and crunch ’em down until they are all ground up.
In a large bowl mix all the stuff together.
Spray a 8 inch square pan with PAM and put in a 350 degree oven. Bake for about 30 minutes.
Cut after they cool for a while; if you don’t cut them that day they become difficult to cut.
Best served fresh!
