4 cups dried kidney beans
1 bell pepper (or 1/2 of each a red and green bell pepper just for fun)
1 large can of fire roasted diced tomatoes (I get these from Whole Foods. If you can’t find them a can of regular diced tomatoes will work)
salt and pepper to taste
Sort the beans and rinse them thoroughly.
Put beans in large pot and cover with water. Bring to a boil, and then simmer for a good long time, adding water frequently. The beans need to be cooked through completely so check them before you add other ingredients. If you are thinking ahead you can bring the beans to a boil the day before and then just cover the pot over night — cooking goes faster that way!
Sauté; onions and bell pepper in oil.
When the beans are done put in the onions and peppers, and add chili powder to taste (at least a couple of tablespoons), salt and pepper, along with about 1 tablespoon of cocoa. Add tomotoes. You can also add tomato paste if you like that flavor. (I do.)
Top chili with a good sharp cheddar cheese and serve with the cornbread recipe. if you know what’s good for you!
